Amazingly Delicious Hummus

 

 

 

Hummus is one of my favourite foods; it’s healthy, tasty and versatile. I use it as a dip, as a salad dressing, as well as for sandwiches and spreading on toast.

There are lots of Hummus recipes to choose from and this is mine. Recipes can and should be adaptable to suit what you have in your cupboards, there should never be a need to go out and buy an expensive ingredient that you may only use occasionally unless you want to. I make my Hummus oil free apart from the Tahini which I do feel is an essential part of Hummus, however if you are following a completely oil free diet you could omit this.

 

The Recipe

 

 

1 Tin of Chickpeas

3 Tablespoons of Tahini

1 Clove of Garlic

Juice of one lemon

Black Pepper

 

These are the ingredients you will need to make a basic Hummus, once you have these you can then add whatever flavours, spices or herbs you like.

In this one I chose to add a teaspoon of Mild Chilli Powder and a teaspoon of Cumin.

 

The Method

 

 

Drain the tin of Chickpeas saving the water from the tin ( the Aquafaba). Put all the ingredients into a blender and blitz, at this point you may find you may need to add a little liquid if the Hummus is too thick. I use the Aquafaba pouring just a little in and blending until it is the of the consistency of your choice. You could blend with a little Extra Virgin Olive oil instead of the Aquafaba, the choice is yours.

 

Some of my other favorite variations are:

  • Sundried Tomato and Basil, for this I use half a jar of Sundried tomatoes and a handful of fresh Basil.
  • Roasted Pepper, you can roast peppers in the oven or you can add a jar of peppers making sure you drain off the oil or your Hummus maybe too oily.
