My first Veggie box

 

Just a quick update.

 

 

So as I mentioned in my post on the Kettering Vegan Market  the much anticipated arrival of my first Riverford veggie box came on Monday. I went for a medium box this time, I wanted to see what the box was like when it arrived and I still had vegetables left from the previous week.

I was really pleased with the quality of the box and we’ve had some delicious meals made from the contents. I’d already done my menu for this week before I signed up for the box but changed some of our week night meals to use some of the contents. So as well as our planned meals we enjoyed a Cauliflower and Chickpea curry and a Mushroom, Kale and Pearl Barley slow cooker casserole. I’ll post these recipes at a later date.

 I bought Bananas and Oranges as add-ons. I have to say the oranges have been particularly juicy and extremely Orangey if that’s even a good way to describe them. They tasted  just like Oranges used to when I was a child and my Nana used to cut them up and squeeze the quarters into my mouth, leaving me to then eat the remaining orange flesh afterwards.

I’m trying a larger box next week as well as a fruit box, I’ll let you know how I get on with it. I’ve still got the potatoes to use up as well as the radishes. As I don’t want to waste anything I have googled what I could do with the radish tops. I discovered the radish leaves are edible and can be used as a salad leaf or sauteed like spinach so I might add them to a stir fry. As for the radish themselves, although we consider them apart of the salad family they are a root vegetable and as well as being eaten raw they can be cooked so I am going to roast them off with some other vegetables to go into roasted vegetable and falafel pittas.
