Simply the best Scrambled Tofu

 

One of the things I love, especially at a weekend, is a cooked breakfast and in particular a great scramble. I make mine using Silken Tofu over the standard firm tofu, I find it is more reminiscent of the soft fluffy scrambled egg that I used to enjoy before going fully plant based. It’s quick and easy to make. This is how.

The ingredients

1 pack of Silken Tofu

1 Tablespoon of Nutritional Yeast Flakes

1/2 Teaspoon of each of Turmeric, Mustard Powder and Himalayan Black Salt

A good grind of Pepper

 

The Method – Serves 2

Drain the Tofu using a sieve, you do not press Silken Tofu. Heat a frying pan, I use a non stick pan and therefore there’s no need to add any oil or butter. Add the Tofu and break up with a fork and keep moving until the mixture looks like the texture of Scrambled Egg.

Add the Nutritional Yeast, Turmeric, Mustard Powder and Himalayan Black salt, this is when the magic happens, the salt gives an nice eggy aroma and taste to the Scramble.

Stir in the spices and cook for a further 3 minutes until the Tofu is hot and resembles Scramble. Season with a good grind of Black Pepper

You can then serve on toast as in the picture above or serve as a part of your favorite cooked breakfast

Try it it out; if you only ever have one scramble recipe, this is the one you need.
